Empirical Spirits are definitely in a singular category. These creations are unyielding to any particular definition and so much fun to explore. Soka is one of my favorites so far. Summer flowers, mango, melon, and cucumber aromas subtly ascend from the glass, but there is also an earthy element reminiscent of rhum agricole. On the palate these elements carry through with more intensity, as well as other tropical fruit flavors for support. The finish circles back to the more earthy end of the flavor spectrum. I’d definitely explore this as a martini base, adding yuzu or shiso bitters. I also recommend making a white sangria riff with honeydew and cantaloupe or using pickled watermelon rind as a garnish. As unique as Soka is, the possibilities are boundless.
